I’ve been living in Poland for the last 13 years and can only say good about the country. The language barrier still exists after all that time but luckily most younger Polish speak English. It’s definitely a nice place to life.
I cannot comment about living in Italy as I have only visited it for vacation a few times. It’s a beautiful country and people where nice everywhere but if it comes to work, I’m sure Poland has more to offer. It’s the outsourcing country of Europe. Good wages and highly qualified people.

If your server doesn’t rely on docker I would give FreeBSD a try. I’ve been using Debian for 20 years and moved to FreeBSD a few years ago. Now I can never go back. Not that I don’t like Debian anymore but FreeBSD is a true server system. Simple, fast and stable. And with their jails implementation (something like docker but less obscure) you can easily isolate your services from the rest of the system.
